Recipe: Broiled Marinated Lamb Chops

After all the stress of the holidays—all that shopping, wrapping, decorating and being merry!—it can be tempting to order a pizza when the big meal comes, but reach for this recipe instead. It almost as easy as ordering in, needing only a quick whisk for the marinade and a few minutes under the broiler. It’s low in calories but high in both protein and flavor. And, since most of us don’t have lamb everyday, it’s special. Easy and special is a perfect combo for the holidays.

Of course lamb doesn’t have to be on your table only during the holidays, since it’s low in fat and high in protein and omega-3 fatty acids. You can match some of lamb’s calorie content with the leaner cuts of beef but lamb also has a unique flavor profile that works well with this recipe’s marinade. It’s one of our favorites.

First, the ingredients—which are olive oil, Worcestershire sauce, lime juice, light soy sauce, garlic, lamb, salt and pepper.

You won’t need to preheat your broiler until the chops are done marinating, so start with mincing three cloves of garlic and juicing your limes.

Pro Tip: Use the palm of your hand to roll your lime on the counter, pressing hard, to make it easier to juice. One of my limes gave me more than three tablespoons of juice, but you may need two if your limes are smaller.

Toss all your ingredients except the chops in a large bowl and whisk together. Add your chops, cover, and refrigerate for a minimum of 15 minutes and up to one hour. The lime will work to tenderize the meat so you won’t want to leave the chops in the marinade too long.

Remove the chops from the marinade and pat them dry.

Preheat your broiler. You may also use an air fryer with a broiler setting. Broil the chops for about 4 minutes per side or until an instant read thermometer reads the following internal temperatures:

Medium Rare 135 F

Medium 150 F

Well done 160 F

Allow the chops to rest for about five minutes before serving.
